I keep to simple, high-protein meals that keep me full, energized, and realistic for busy days.
A lot of people think eating healthy has to be complicated… but honestly, most days I keep things very simple. Prioritizing protein, balancing blood sugar, and building meals that actually taste good has been the biggest game changer for me!
Here’s a realistic look at a full day of eating for me while training for my 70.3 IRONMAN.
On the side:
Mash together eggs, cottage cheese, avocado, lemon juice, and seasonings. Top with hot honey and enjoy.
Serve with sourdough toast, sausage patties, and blueberries for a balanced, high-protein breakfast.

Cook ground beef and season as desired. Warm tortillas, then assemble with cottage cheese, avocado, salsa, and beef.
Mix yogurt and protein powder until smooth. Top with berries, pumpkin seeds, bee pollen, cinnamon, and drizzle honey on top.
Cook shrimp and veggies, serve over jasmine rice, and top with creamy sriracha.
